Betterpan is a pressurized braising pan that offers multi-purpose cooking for braising, boiling, browning, steaming, frying or anything that your current tilt skillet can accomplish and more.
Betterpan is available in either electric or gas heated versions with three capacities from 29 to 38 and 48 gallons.
It also had built in HACCP recording so as soon as you press start the unit is going to record all the HACCP data for you to print out when you are ready via the USB port.
From the programmability side of this unit we are able to put all of your recipes into the unit so when you press start its going to prompt and change the time and temperatures and tell you when to add the ingredients per your recipe.
All of those recipes are also transferrable via the USB port. The option on this unit is also the internal product probe that is so we can monitor the internal temperature of the protein as it goes through the cooking process.
The benefits of pressure are speed, nutrient retention and recipe cost.
- We are going to be able to reduce the time of your recipe under pressure by up to 40% of the standard cooking time,
- the nutrient retention is much higher in pressure cooking than it is in standardized oven braising and even combi cooking
- we are going to be able to reduce the recipe cost because the nutrient retention is higher so our flavor retention changes as well.
- In pressure we don’t have to fully submerge the product in liquid or stock so we can reduce that cost as well as any flavoring agents like mire poix out of the recipe cost and saving you money.
