My name is Alessio Bottin, Chef in Verona of the “Food Boutique”, I’m food consultant, teacher at the University of Taste in Vicenza. I was born in the year 1977 and I have been growing in the kitchens since I was 13 years old. During my professional experience I supported many famous Italian chefs and pastry chefs, I learned in this way the culinary art from the leaders. Moreover I collaborated, during the 80s and 90s, for the development of machinery, now common in modern professional kitchens, but at that time considered futuristic.
Food Boutique is a ”Ghost Kitchen”.
For 6 years we have been focusing on processing fresh and high quality raw material with the technique of jar-based-cooking and vacuum cooking, creating ready-to-eat menus. With 5 employees, including a Sous-chef, we develop ready meals for more than 15 catering activities; delivering high quality finished products every day. We also offer a private banqueting service.
Our mission is a continuous research of innovation with the respect for raw materials, as mother nature has always taught us.
The challenge for Food Boutique
One of our Italian customer, leader in the production of natural and organic food, asked us to make ready-made vegetables, jams and sauces, without altering the organoleptic qualities of the raw materials that were delivered directly from the countryside. We had to look for an alternative machine to the classic professional bratt pans!
The solution
We were looking for a flexible machine, able to produce different types of menus, without altering the organoleptic qualities of the raw materials. After many tests and trials, among various companies, we met Firex Srl with its 30 liters multifunctional solution. Cucimix – Automated cooker with built-in mixer and electronics,is ideal for large restaurants and food production, it gives great versatility in small dimensions. The machine is equipped with “FTC” (Firex Touch Control) touchscreen control panel, which calibrates high temperatures and cooking time and mixing speed.
We fell in love with it immediately!
Our client loved it as well. More than satisfied with the dishes we had prepared for him, he purchased his own Cucimix.
What does the customer say?
It’s a very versatile braising pan, for both savory and sweet preparations. Always safe and reliable, with complete control of the mixer and the temperatures. In this type of machines, we memorize recipes that reach up to 20 different cooking phases. It’s able to follows us, step by step, even when we need, throughout the day, a kettle for cooking pasta, or a braising pan where we braise a Bolognese sauce slowly. Or in banqueting, where Cucimix becomes an automatic risotto cooker. Each grain of rice is cooked uniformly with excellent creaming.
Since then, a strong collaboration has started with Firex. We understood the potential of their solutions, able to automate and simplify all processes.
