My name is Jean-Marie Auboine, founder, owner, president and CEO of an upscale artisan chocolate factory called JMA Chocolates. I was born and raised in France and later, started working internationally through Europe & Mexico, which eventually led me to the US.
JMA Chocolates LLC is a premium artisan chocolate and confections manufacturer, doing business under the brand name, Jean-Marie Auboine Chocolatier. Master Chocolatier, Jean-Marie Auboine and his team handcraft five-star, award winning recipes of luxurious chocolates and confections daily.
Everything is made purely and naturally with premium ingredients and no preservatives added, all in the heart of Las Vegas, Nevada, minutes away from the world-famous Las Vegas Strip.
Beginning with a team of 2 in production, 8 flavors, 5,000 sq/ft facility, into a small company growing a luxury brand with a staff of 25+ in a 17,000+ sq/ft footprint.
We offer around 150 different varieties of flavors. We can produce up to 45,000 pieces of chocolate a day, 2,000lbs of caramel and around 1,000lbs of our Dragée Collection a week.
Our confections are sought after by the finest hotels, resorts, casinos and retail shops nationwide. We also sell to business and corporate clients, and we have our own physical retail shop and our website!
The challenge for Jean-Marie Auboine Chocolatier
We faced significant challenges with COVID, we lost 99% of our business, which in turn obliged us to lay off our ENTIRE staff. The business never closed, instead we responded quickly, made a plan, and were presented with opportunities shortly thereafter that propelled us to not only get through a challenging and uncertain season, but it also supported our growth today!

As we continue to grow, as a premium chocolate manufacturer, we want to continue to provide an elevated experience: with quality ingredients and award-winning flavors, consistent product no matter the scale of production, and an unmatched customer experience. And that’s when we started looking for a multifunctional machine that would help us optimise our ever-growing demand.

Cucimix can work in complete autonomy with no need of constant supervision thanks to the combination of mixer and the Firex Touch Control control panel. Also, the temperature probes provide precise and costant temperature control which is key to obtaining consistent and high quality results.
