Hi my name is Juan Manuel Alfonso Rodríguez. I am a 3rd generation baker and pastry chef and I am the owner of Confiteria Artiaga – a family business.
My grandparents had their first bakery in La Boca, Buenos Aires. They co-owned it for almost 20 years with a partner.
In 1980 they had the chance to buy a bakery entirely of their own and that’s when they bought Confiteria Artiaga, which is a bakery from 1931.
Here are some statistics per year:
- we use 60 tons of organic wheat flour;
- we produce 11 tons of pastry cream;
- we use 8 tons of organic sugar.
We have 4 different productive sectors: meals, bakery, pastry and sandwiches.
We sell more than 300 plates of food from Monday to Friday at noon. And generate on average more than 700 tickets per day (we are open every day of the week).
Artiaga is an artisanal bakery that has a 240m2 of production area.
We work for our customers. We don’t do business to business.
We went from 2 employees to 30 now and we are still growing. We are about to open our second store in November and we will have around 50 employees.
The challenge for Confiteria Artiaga
Technology was a challenge for us but extremely helpful and necessary to grow and to improve quality.
