It’s called Betterpan: the multi-functional braising pan which you can use to braise, boil, brown, steam and fry, or any other processing your current braising pan can do and much more.
Betterpan is available in electric or gas versions, in four capacities: 110, 145, 180 and 220 litres. It allows recording of HACCP data. As soon as the start button is pressed, the unit records all the values, which are then available for printing after downloading from the USB port.
In terms of programmability, Betterpan allows infinite recipes to be stored, so when you press start, all you have to do is follow the set times and temperatures and the machine will alert you when the recipe ingredients are to be added. Recipes can also be transferred via the USB port. Optional on this machine is the core probe that allows you to monitor the internal temperature of the product during the cooking process.
What are the advantages of pressure cooking in the professional kitchen?
Pressure cooking with the Betterpan multifunction braising pan allows you to cook your recipes faster, increase nutrient retention and reduce recipe costs.
- Reduce the total time of your recipe by up to 40% compared to standard cooking;
- Nutrient retention is much higher in pressure cooking than standard baking and even combination cooking;
- We’ll be able to reduce the cost of the recipe because nutrient retention is higher and therefore flavour preservation is also higher;
- With pressure cooking, we don’t have to completely submerge the product in liquids or broths. Therefore we can reduce the cost of any flavouring agent, saving money.
