Pastificio Cecchin: the company
My name is Andrea Cecchin and together with two partners, I am the owner of Laboratorio Alimentare Cecchin Andrea e Carlo Srl located in Tezze sul Brenta in the Vicenza area.
The pasta shop Cecchin was funded 25 years ago as a family business I started with my brother Carlo and then our wives joined the team over the years. When we set up the business, we thought we would only produce fresh pasta, but we soon started making crespelle, a ready-meal that once purchased only needs a quick warm-up in the oven.
The company has grown a lot over the past five years, so much so that it currently has 50 employees and recorded a 9-million turnover in 2021.
We make: fresh plain pasta, filled pasta (tortelloni, ravioli, cappelletti, fagottini), gnocchi, passatelli and crespelle. We produce about 8.000 12,3 oz-packs of crespelle each day, and the same goes for filled pasta.
Our premises account for about 2000 m² of production facilities, divided into two buildings. Last year we celebrated the opening of our new logistics centre with storage cells for finished products that are ready to be shipped.
Our main focus is the Italian market, which indeed provides for 80% of our turnover. Our presence in the Triveneto area (Veneto, Friuli Venezia Giulia and Trentino-Alto Adige regions) is strong and long-estabilished, but in the last period we have been expanding also in the Lombardy, Piedmont, Liguria and Emilia Romagna regions as well as in the centre of Italy. The remaining 20% of our market lays abroad, as we’ve been exporting our products in France, in the United Kingdom and in Austria for several years and recently also in Norway.
Our main distribution channel is the Large Scale Retail especially in Italy, while for what concerns the export market we work also in the Ho.Re.Ca sector.
Our goal for the next years is to double our turnover by expanding our target market and increasing our presence in new markets.
The challenge for Pastificio Cecchin
We were looking for a braising pan with mixer, something different than what we already had in the building.
In particular, we wanted a machine that was efficient, user friendly and as much automated as possible so that the user would only have to be involved during the product loading operation and the setting of the cooking process.
The solution
We searched the market for equipment that could meet our needs and eventually chose Firex because after testing their machines we realised they suited us best.
We chose Cucimix to make the fillings of our fresh pasta (cappelletti and ravioli) and crespelle, but also to cook sauces like ragù (bolognaise sauce).

Pressure cooking allowed us to achieve such great results that we have already reached the qualitative standards we set in the first place.
I won’t lie, at first I thought it wasn’t going to be easy for our employees to handle the Cucimix braising pan, but it actually turned out to be easier than we all thought! Cucimix is equipped with a very innovative yet intuitive software: once the parameters are set, you can set and adjust the cooking processes through the FTC ( Firex Touch Control ) control panel.
I was very pleased also with the after sales and assistance services: the staff are professional and skilled, always on hand and able to give the right advice and provide support in the management and set up of the cooking processes.
When I had a technical problem I couldn’t solve on my own, the service staff came immediately to the rescue and quickly helped me solved the issue.
As we aim at increasing our production in the next years, we will certainly consider buying some more pieces of Firex equipment.
