My name is Michael Sperger, CEO and founder of the Wirtshaus Dienstleistungsgesellschaft GmbH. I am as well the second generation leaseholder of the famous Hofbräuhaus in Munich. My parents took over the restaurant decades ago and I was officially confirmed together with my brother as their successor in 2010 by the Hofbräu Brewery.
Our catering service ensures professional hospitality through systematization and specialization in all areas of gastronomy. The central specialist departments ensure that everything runs smoothly in the restaurant on site by working professionally and efficiently in the background.
Wirtshaus Dienstleistungs GmbH has competent partners for kitchen technology, kitchen construction and dispensing systems, as well as experts for conceptual, architectural and legal issues. Digitized processes for smooth workflows are a future-oriented gain for every pub, canteen or hotel, for example.
Founded in 2010, the GmbH is a company that also deals with building services and human resources, sales and purchasing, event technology, and business management consulting for our clients in the catering sector. A wide range of food products and digitalized processes are the main components. In this way, we competently relieve entrepreneurs in all administrative and operational areas. We want your guests to feel comfortable and want to come back. We achieve this by ensuring that our business clients can focus directly on the hospitality of their own customers. This is our philosophy.
We produce food for several larger and smaller restaurants in and around Munich. We are as well proud to be one of the largest provider of food for the annual Oktoberfest.
The production site is located at the boarders of Munich on: over 400 m², with currently 80 people involved. The highly technical operation produces thousands of tons of food per year, mainly using local and regional products. Thanks to this technology, we not only achieve a particularly high degree of freshness in production, but we also have very little food waste as we only produce to order.
The challenge for Wirtshaus Dienstleistungs GmbH
After having been confirmed by the HB brewery to lead the Hofbräuhaus into the next chapter of leaseholders we were forced to change a few things quickly. The kitchen of the restaurant was too small to prepare the food for the constantly raising numbers of visitors and I therefore decided to built a production site outside of Munich. The food is trucked in twice a day. Soon afterwards other colleagues asked for our services and support so we grew quickly.
In future we would like to digitalize more restaurants and venues as the future lays in the mixture of digitalization and service in the kitchens.
