My name is Davide Fontanive, and I am the General Manager of the Carpano Group, a company that includes several business units: a cured-meat plant, a dairy, a butcher shop, and the newest addition, a restaurant.
Over the years we have always pursued a path of continuous evolution, progressively expanding our offering: from meat processing to the development of an increasingly broad range of pre-cooked and ready-to-eat foods, designed to provide high service and convenience to the end consumer, while always keeping quality as the central element.


Our company was founded in Pozza di Fassa in 1952 as a traditional butcher shop, deeply connected to the local area and Trentino’s gastronomic culture. Over time, thanks to steady growth, we evolved by building a true cured-meat production facility in Falcade, expanding production from classic traditional cured meats to an increasingly strong specialization in high-service products.
Initially, our range included typical cured meats, but we gradually also moved into the production of cooked and ready-to-eat foods, such as goulash, ragù, and other preparations, responding to new market needs. A key turning point came with the entry of the current third generation, which led to the creation of the current production plant, as well as a dairy and a restaurant.


Thanks also to our direct retail outlets, we have always remained in direct contact with the end customer. This has allowed us to quickly grasp changes in purchasing habits, which over the last ten years have shifted more and more toward cooked, convenient, ready-to-eat products.
Today our identity is based on a clear balance: preserving craftsmanship and tradition, while keeping up with the times—both through innovation in plants and production machinery, and through the development of new products for the market.

Today the Carpano Group is a structured and continuously evolving organization, with a modern production scale that remains tied to artisanal quality:
- Cured-meat plant with 2,000 m² of production area
- Dairy with over 400 m² of production and commercial area
- Butcher shop with over 400 m² of production and commercial area
- Restaurant with over 200 seats
- 50 employees currently working in the company
- Presence across multiple distribution channels: Retail, HoReCa and Large-scale retail
- Around 20 products currently made using Firex Cucimix bratt pans

We were looking for a reliable partner able to supply professional machinery that would allow us to take a further leap in quality in the production of our cooked foods. Our main need was to combine craftsmanship with production consistency, maintaining high standards even as volumes increased.
