My name is Ilan Mojcho and I am the owner of Neni, a family business founded in 2009.
It all started one evening when the whole family was gathered together and we started talking about our dream of opening a restaurant. One year later, we opened the first Neni restaurant in Vienna: a place where visitors from all over the world can come to enjoy Levantine cuisine and share meals together. The cooking processes of course must be spotless.
In NENI we cook a lot of pulses, especially chickpeas. In fact, our signature dish is hummus. Neni has really bet on this product. Everyone knows that good hummus comes from good chickpeas, which themselves come from the earth. In NENI we work with top quality red chickpeas: we cook them for hours until they become a puree, almost like a mousse, and then we process them further.
Numbers
Neni has grown a lot over the years and the chain now counts of 13 restaurants, employing 650 people with a production facility of about 3500 m².
The first batch ever produced back in 2012 was one kilo of hummus and the company now delivers 200 tons of products per month including hummus, salads, and dishes that are then exported to eight different countries. In the same year the copany moved their first steps into retail, making Levantine appetizers, salads and sauces for supermarkets in Europe. The largest customer is Spar, which is present in both Austria and Italy.

Of course we owe our success to finding the right partnerships, whereby we could learn from each other, so we looked for a partner who could help us grow together. But the most important aspect for us, is that this gave us access to more knowledge”.
The challenge for NENI
As time passed, Neni could no longer cook in the restaurant because the demand was too high. Therefore, they searched for a long time for the right partner, knowing that this process would be the most important in their entire production. Choosing Firex was a result of the need to find a reliable partner who could support the company in its growth. With Firex equipment they can now cook high quality chickpeas quickly, while being able to meet the standards required by the industry.
What the customer says
In 2012, NENI purchased their first Firex cooker: a 300-liter Baskett kettle, to improve the quality and efficiency of their hummus production. Neni has been using Firex cookers for about 10 years, with five units installed in their production facility. Thanks to Firex, they have been able to reduce their workdays by 4-5 hours per day, increasing efficiency and productivity.
Over the past few years, they managed to cook about 120 tons of chickpeas, pulses, and bases for salads and marinades, as well as 34 tons of lettuce and fruits. Partnering with Firex has helped them to expand their production as well as significantly increase the quality and quantity of our hummus.
